A cozy, indulgent breakfast bake combining cinnamon rolls soaked in a custardy batter and topped with a sweet glaze, perfect for busy mornings or special occasions.

Ingredients

Scale
  • 8 large cinnamon rolls (store-bought or homemade, unbaked)
  • 6 large eggs (room temperature)
  • 2 cups whole milk or 2% milk (480 ml)
  • ½ cup heavy cream (120 ml, optional but recommended)
  • ½ cup granulated sugar (100 g)
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon (plus extra for sprinkling)
  • ¼ teaspoon salt
  • 2 tablespoons melted butter (for greasing and richness)
  • 1 cup powdered sugar (125 g, for glaze)
  • 23 tablespoons milk or cream (for glaze)
  • 2 ounces cream cheese (optional, softened, for glaze twist)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with melted butter.
  2. Cut the cinnamon rolls into quarters and spread evenly in the prepared baking dish.
  3. In a large bowl, whisk together eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until smooth and light.
  4. Pour the custard mixture evenly over the cinnamon roll pieces, pressing gently to ensure absorption.
  5. Cover the dish with plastic wrap and refrigerate for at least 30 minutes or overnight for extra gooeyness.
  6. Remove plastic wrap and bake uncovered for 40-45 minutes until the top is golden brown and custard is set but soft inside.
  7. While baking, prepare the glaze by whisking powdered sugar with milk or cream and cream cheese (if using) until smooth.
  8. Remove the bake from the oven and let cool for 5-10 minutes, then drizzle the glaze generously over the top.
  9. Serve warm and enjoy.

Notes

Use room temperature eggs for smoother custard. Soaking the cinnamon rolls overnight yields extra gooey texture. Tent with foil if top browns too quickly. Fresh cinnamon enhances flavor. For gluten-free, use gluten-free cinnamon rolls and ingredients. Reheat leftovers gently to maintain softness.
