A quick and easy skillet-baked chocolate chip cookie with gooey center, crispy edges, and a sprinkle of flaky sea salt for a perfect homemade dessert.

Ingredients

Scale
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (135g) chocolate chips (semi-sweet or mix of semi-sweet and dark)
  • Flaky sea salt, to sprinkle

Instructions

  1. Preheat the oven to 350°F (175°C). Place your cast iron skillet inside to warm up while you prepare the dough.
  2. In a medium bowl, combine melted butter, brown sugar, and granulated sugar. Stir until smooth and creamy, about 2 minutes.
  3. Add the egg and vanilla extract. Beat until fully incorporated and glossy.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula until no flour streaks remain. Do not overmix.
  6. Fold in the chocolate chips evenly.
  7. Carefully remove the hot skillet from the oven and grease it lightly with butter or non-stick spray.
  8. Spoon the dough into the skillet, pressing gently to form an even layer without compacting.
  9. Bake for 18-22 minutes until edges are golden brown and set but the center is slightly underbaked and jiggly.
  10. Immediately sprinkle flaky sea salt over the warm cookie.
  11. Cool for 5-10 minutes to firm up slightly but remain warm and soft inside.
  12. Serve directly from the skillet, optionally with vanilla ice cream or caramel sauce.

Notes

Use lukewarm melted butter to avoid cooking the egg prematurely. Do not overmix the dough to prevent a tough cookie. Warm the skillet before baking for even heat and crispy edges. The cookie is best served warm and can be reheated gently in the oven. For dairy-free, substitute butter with coconut oil and use dairy-free chocolate chips. For gluten-free, substitute all-purpose flour with a 1:1 gluten-free blend.
