  • 1 medium yellow onion, diced
  • 2 large garlic cloves, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 tablespoon olive oil
  • 1 teaspoon poultry seasoning
  • Salt and pepper, to taste
  • 1 tablespoon Worcestershire sauce (optional)
  • 1/2 cup low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 cups shredded cheddar cheese
  • 1 bag (about 2 pounds) frozen tater tots
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish with olive oil or nonstick spray.
  2. Heat olive oil in a large skillet over medium-high heat. Add diced onion and sauté for 2–3 minutes until soft. Add minced garlic and cook for 30 seconds.
  3. Add ground turkey, breaking it up with a spoon. Cook for 6–8 minutes until browned and cooked through. Sprinkle in poultry seasoning, salt, pepper, and Worcestershire sauce. Stir in frozen mixed vegetables and cook for another 2 minutes.
  4. In a medium bowl, whisk together cream of mushroom soup, sour cream, chicken broth, and milk until smooth.
  5. Spread turkey-veggie mixture evenly in the prepared casserole dish. Pour creamy sauce over and gently spread to cover. Top with shredded cheddar cheese.
  6. Arrange frozen tater tots in neat rows over the cheese, covering the entire surface. Press down lightly.
  7. Bake on center rack for 35–40 minutes until bubbling and tots are golden. For extra crispiness, broil for 2–3 minutes at the end, watching closely.
  8. Remove from oven and let rest for 5–10 minutes. Garnish with chopped parsley if desired.
  9. Slice and serve with a sturdy spatula, ensuring each piece has tots, cheese, and turkey-veggie base.
