  • 2 medium carrots, sliced into rounds
  • 2 cups kale, torn into pieces
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for 3-4 minutes until softened.
  3. Stir in the garlic, cumin, and smoked paprika. Cook for 1-2 minutes until fragrant.
  4. Add the diced sweet potatoes, carrots, and a pinch of salt. Stir well to coat the vegetables in the spices.
  5. Pour in the vegetable broth and bring the mixture to a gentle boil.
  6. Reduce the heat to low and let it simmer for 20 minutes, or until the sweet potatoes are tender.
