Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 8 ounces chorizo, sliced into bite-sized pieces
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Optional toppings: croutons, sour cream, or chili oil

Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot over medium heat.
  2. Add the sliced chorizo and cook for 5-7 minutes, stirring occasionally, until browned and oils are released. Transfer to a plate using a slotted spoon, leaving the oil in the pot.
  3. Add the diced onion to the pot and sauté for 3-4 minutes, until softened.
  4. Add the minced garlic and cook for another minute, stirring frequently.
  5. Add the diced sweet potatoes to the pot and stir to coat them in the oil and aromatics.
  6. Sprinkle the smoked paprika over the vegetables and stir well to combine.
  7. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and let it simmer for 20 minutes, or until the sweet potatoes are tender.
  8. Once the sweet potatoes are cooked, remove the pot from the heat and allow to cool slightly.
  9. Using an immersion blender, blend the soup until smooth and creamy. If using a regular blender, work in batches and be cautious with hot liquids.
  10. Return the blended soup to the pot and stir in the cooked chorizo. Heat on low for 5 minutes to warm through.
  11. Season with salt and pepper to taste.
  12. Serve hot, garnished with freshly chopped parsley and optional toppings like croutons or sour cream.
