  • 2 cups (250g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) milk
  • 2 tbsp granulated sugar (for topping)
  • 1 tsp cinnamon (for topping)
  • Melted butter (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and lightly dust with flour.
  2. Pour 1 cup of apple cider into a medium saucepan and simmer over medium heat until it reduces to about 1/2 cup, approximately 10 minutes. Set aside to cool.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  5. Beat in the eggs one at a time, followed by the vanilla extract and cooled reduced apple cider.
  6. Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the milk. Start and end with the dry mixture, mixing just until combined.
  7. Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the loaf is baking, mix the granulated sugar and cinnamon in a small bowl for the topping.
  10. Once the loaf has slightly cooled, brush the top with melted butter and sprinkle generously with the cinnamon sugar mixture.
  11. Let the loaf cool completely before slicing.
