  • 12 oz spaghetti, cooked until al dente
  • 3 cups shredded or diced cooked chicken
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese, plus extra for topping
  • 1 medium green bell pepper, diced finely
  • 1 small onion, diced finely
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish lightly with cooking spray.
  2. Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, about 8-10 minutes. Drain and set aside.
  3. In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, sour cream, chicken broth, garlic powder, paprika, salt, and pepper. Stir until smooth and well blended.
  4. Heat a small amount of oil in a skillet over medium heat. Sauté the diced onion and green bell pepper until soft, about 5 minutes.
  5. Add the cooked spaghetti, shredded chicken, sautéed vegetables, and 2 cups of shredded cheddar cheese to the sauce. Mix until everything is evenly coated.
  6. Pour the mixture into the greased baking dish and spread it out evenly. Top with additional shredded cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and the casserole is bubbling around the edges.
  8. Let the casserole cool for about 5 minutes before serving.

Notes

Use rotisserie chicken for convenience and extra flavor. Don’t overcook the spaghetti to avoid mushiness. Sautéing the veggies enhances their flavor and texture.
