Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, use a mixer to beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  4. Mix in the egg, pumpkin puree, and vanilla extract until fully combined.
  5. Gradually add the dry mixture to the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  6. Drop the dough onto the prepared baking sheets using a cookie scoop or tablespoon, spacing about 2 inches apart.
