Tender meatballs simmered in a rich Salisbury steak-inspired gravy, perfect for busy weeknights or cozy weekends.

  • 1 lb ground beef (80/20 for best flavor and texture)
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1 large egg (lightly beaten)
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 cups beef broth (low sodium recommended)
  • 1 medium onion, thinly sliced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 1-inch meatballs, yielding about 20 meatballs.
  3. Optional: Heat a non-stick skillet over medium heat and brown the meatballs for 1-2 minutes per side.
  4. In a medium bowl, whisk together the beef broth, ketchup, Worcestershire sauce, and Dijon mustard.
  5. Place the sliced onions at the bottom of your slow cooker. Arrange the meatballs on top, then pour the gravy mixture over them.
  6. Cover and cook on low for 6 hours or high for 3 hours until the meatballs are tender and fully cooked.
  7. In the last 30 minutes of cooking, stir the cornstarch slurry into the gravy and let it simmer until thickened.
  8. Serve the meatballs and gravy over mashed potatoes, noodles, or rice. Garnish with fresh parsley if desired.

Notes

Browning the meatballs adds extra flavor but is optional. For thicker gravy, let it cook uncovered for the last 15 minutes.
