  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves (optional)
  • 12 ounces (340g) wide egg noodles
  • 2 tablespoons unsalted butter
  • Salt for boiling water

Instructions

  1. Pat the beef cubes dry with paper towels and season with salt and pepper.
  2. Heat oil over medium-high heat in a large heavy-bottomed skillet or Dutch oven until shimmering.
  3. Add beef in batches without crowding the pan and sear until browned on all sides, about 3-4 minutes per batch. Set aside.
  4. Lower heat to medium and add sliced onions to the pan. Cook until softened and golden, about 7 minutes, stirring frequently.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Sprinkle flour over onions and garlic, stirring constantly for 2 minutes to create a roux.
  7. Slowly pour in beef broth while whisking to avoid lumps. Add Worcestershire sauce and thyme.
  8. Bring mixture to a gentle simmer until gravy thickens. Season with salt and pepper to taste.
  9. Return seared beef to the pan, stirring to coat with gravy. Cover and reduce heat to low.
  10. Simmer gently for 30-35 minutes until beef is tender and gravy is thickened, stirring occasionally.
  11. While beef simmers, bring a large pot of salted water to a boil. Cook egg noodles according to package instructions (7-9 minutes) until al dente.
  12. Drain noodles and toss with unsalted butter to prevent sticking.
  13. Serve the beef and rich gravy over buttered noodles. Garnish with fresh parsley if desired.
