  • 2 cups baking mix (e.g., Bisquick)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened cream cheese and ground sausage. Mix until well combined.
  3. Add the drained Rotel tomatoes, shredded cheddar cheese, garlic powder, and onion powder. Mix until evenly distributed.
  4. Gradually add the baking mix, stirring until the mixture becomes firm and holds its shape. Add more baking mix if the dough feels too sticky.
  5. Using a cookie scoop or your hands, roll the mixture into 1-inch balls and place them on the prepared baking sheet, leaving space between each one.
  6. Bake for 20-25 minutes, or until the sausage balls are golden brown and cooked through.
  7. Remove from the oven and let cool slightly before serving. Garnish with chopped green onions if desired.

Notes

For extra crispiness, bake an additional 2-3 minutes or place under the broiler for 1 minute. You can prepare the mixture the night before and bake fresh when ready.
