Refreshing Watermelon Mojito Cooler

A quick and easy homemade summer drink combining juicy watermelon, fresh mint, lime juice, and sparkling water for a light, vibrant, and refreshing cooler.

  • 4 cups (600g) fresh seedless watermelon chunks
  • 1215 large fresh mint leaves
  • Juice of 2 medium limes (about 3 tablespoons or 45ml)
  • 2 tablespoons (30ml) white sugar or raw honey, adjust to taste
  • 1 cup (240ml) sparkling water or club soda, chilled
  • Ice cubes as needed
  • Optional: 2 ounces (60ml) white rum for adult version

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks. Place them into your blender and puree until smooth, about 30-45 seconds. If you prefer a pulp-free drink, strain the juice through a fine mesh sieve, pressing gently to extract as much liquid as possible.
  2. In your serving glass or pitcher, add 12-15 fresh mint leaves and 2 tablespoons (30ml) of sugar or honey. Use a muddler or the back of a wooden spoon to press and twist gently to release the mint’s aroma without shredding the leaves.
  3. Squeeze the juice of 2 medium limes (about 3 tablespoons or 45ml) directly into the mint and sugar mixture. Stir to dissolve the sugar somewhat and combine the flavors.
  4. Pour the fresh watermelon juice into the glass or pitcher with the muddled mint and lime. Stir gently to mix.
  5. Fill the glass or pitcher with ice cubes. Top off with 1 cup (240ml) of chilled sparkling water or club soda. Stir lightly to blend and keep the fizz alive.
  6. If making an adult version, add 2 ounces (60ml) of white rum at this point and give a gentle stir to incorporate evenly.
  7. Add a sprig of fresh mint and a lime wedge on the rim for garnish. Serve immediately for the best fizz and flavor.

Notes

Do not over-muddle the mint to avoid bitterness. Use ripe watermelon for best sweetness. Chill ingredients before serving. Add sparkling water and ice just before serving to keep fizz. Adjust sweetness and lime juice to taste. For vegan option, substitute honey with agave syrup. Large ice cubes melt slower and keep fizz longer.
