Instructions

  1. Rinse the watermelon under cold water and pat dry. Cut into 1-inch cubes, removing any seeds.
  2. Crumble feta cheese by hand or with a fork. Let it sit at room temperature for 10 minutes for creamier texture.
  3. Rinse and roughly chop fresh mint leaves.
  4. In a mixing bowl, gently combine watermelon cubes, crumbled feta, and chopped mint. Toss lightly to keep watermelon intact.
  5. Drizzle olive oil and lime juice over the salad. Sprinkle sea salt and black pepper on top.
  6. Gently toss the salad again to evenly distribute the dressing and aroma.
  7. Taste and adjust seasoning with more salt or lime juice if needed.
  8. Chill the salad in the refrigerator for 10-15 minutes before serving for best flavor, or serve immediately.
