Refreshing Sparkling Grapefruit Rosemary Brunch Punch Recipe for a Crowd

A bright and elegant brunch punch combining fresh grapefruit juice, sparkling water, and a subtle rosemary infusion. Perfect for crowds and easy to prepare in about 10 minutes.

  • 4 cups (950 ml) fresh grapefruit juice (about 68 medium grapefruits)
  • ¾ cup (180 ml) simple syrup (homemade or store-bought)
  • 45 fresh rosemary sprigs
  • 4 cups (950 ml) sparkling water or club soda
  • Ice cubes
  • Optional: thin grapefruit slices for garnish
  • Optional: 1 to 1½ cups (240-360 ml) vodka or gin for a boozy version

Instructions

  1. Juice the grapefruits using a citrus juicer to extract about 4 cups (950 ml) of fresh juice. Strain if you prefer less pulp.
  2. In a small saucepan, bring ¾ cup (180 ml) of water to a simmer. Remove from heat and add 4 rosemary sprigs. Cover and steep for 10 minutes.
  3. Make the simple syrup by combining equal parts sugar and the rosemary-infused water in the saucepan. Stir over low heat until sugar dissolves completely. Let cool to room temperature.
  4. In a large pitcher, combine the fresh grapefruit juice and the cooled rosemary simple syrup. Stir gently to blend flavors.
  5. Just before serving, add 4 cups (950 ml) of chilled sparkling water or club soda to the pitcher. Stir gently to combine without losing bubbles.
  6. If desired, add 1 to 1½ cups (240-360 ml) of vodka or gin and stir gently.
  7. Add plenty of ice cubes and thin grapefruit slices to the punch. Float a few fresh rosemary sprigs on top for garnish.
  8. Serve immediately by ladling into glasses with extra ice and a sprig of rosemary.

Notes

Add sparkling water just before serving to maintain fizz. Steep rosemary briefly to avoid overpowering flavor. Use large ice cubes to slow dilution. Prepare rosemary infusion and juice ahead to save time. Store juice and syrup mixture separately from sparkling water for up to 2 days in the fridge.
