A refreshing and easy-to-make frosé mimosa slushie bar featuring rosé, sparkling wine, and luscious peach purée, perfect for entertaining or relaxing on a warm day.

  • 1 bottle (750 ml) dry rosé wine, chilled
  • 1 bottle (750 ml) sparkling wine or champagne (brut or extra dry), chilled
  • 34 ripe fresh peaches, peeled and pitted (or about 2 cups frozen peach slices)
  • 1/4 cup (50 g) granulated sugar, adjust based on peach sweetness
  • 1 tablespoon (15 ml) fresh lemon juice
  • 4 cups (about 32 fl oz or 950 ml) ice cubes
  • 2 tablespoons (30 ml) simple syrup (optional, for sweeter slushie)
  • Fresh mint leaves for garnish
  • Peach slices or berries for garnish (optional)

Instructions

  1. Prepare the Peach Purée: Peel and pit the peaches. Blend peaches with sugar and lemon juice until smooth, about 30 seconds. Adjust sugar if needed.
  2. Make the Rosé Slush: Pour chilled rosé and ice cubes into blender. Blend on high for 1-2 minutes until slushy and smooth. Add rosé if too thick.
  3. Transfer the rosé slush to a large bowl or beverage dispenser. Cover and chill until serving.
  4. Set up the bar: Place rosé slush container next to peach purée bowl. Add chilled sparkling wine and garnishes like mint and peach slices. Provide spoons and straws.
  5. To serve: Scoop rosé slush into glasses, add a spoonful of peach purée, top with sparkling wine, stir gently, and enjoy.

Notes

Prepare rosé slush about 30 minutes before serving to firm up. If too frozen, let sit 5 minutes at room temperature. Add simple syrup for sweeter slushie if desired. Use dry rosé to avoid overly sweet flavor. Keep all components chilled until serving. Leftover rosé slush can be frozen up to 2 days; thaw and re-blend before serving. Peach purée keeps 2-3 days refrigerated.
