A quick and easy summer cocktail combining chilled champagne with fresh raspberries and a splash of lemon juice for a bright, refreshing flavor.

  • 1 (750 ml) bottle Champagne or Sparkling Wine (brut preferred)
  • 1 cup fresh raspberries
  • 2 tablespoons freshly squeezed lemon juice
  • 12 tablespoons simple syrup (adjust to taste)
  • Fresh mint leaves (optional, for garnish)
  • Ice cubes (optional)

Instructions

  1. Chill the champagne bottle and raspberries in the refrigerator for at least 2 hours before serving.
  2. Rinse fresh raspberries gently under cold water and pat dry. Set aside 2-3 raspberries per glass for garnish.
  3. In a small bowl, combine simple syrup and freshly squeezed lemon juice. Stir well to blend.
  4. Add remaining raspberries to the syrup and lemon mixture. Gently crush some berries with a cocktail stirrer or spoon to release juice, keeping some texture (about 2 minutes).
  5. Place 3-4 raspberries into each champagne flute, then spoon about 1 tablespoon of the raspberry-lemon syrup mixture over them.
  6. Slowly pour about 5 ounces (150 ml) of chilled champagne into each flute, pouring gently down the side to preserve bubbles.
  7. Garnish each glass with reserved raspberries and a small sprig of fresh mint. Optionally add a few ice cubes for a cooler drink.

Notes

Use fresh, firm raspberries to avoid cloudy drinks. Pour champagne slowly to preserve bubbles. Simple syrup can be homemade or store-bought. For a sweeter drink, add more syrup. Mint leaves add aroma but avoid muddling them to prevent bitterness. Prepare syrup base ahead but add champagne just before serving.
