Instructions

  1. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  2. Using an electric mixer, cream the softened butter, granulated sugar, and brown sugar until fluffy, about 2 minutes. Add the egg, vanilla extract, and pumpkin puree, mixing until combined.
  3. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing to keep the cookies soft.
