  • 1 teaspoon ground cinnamon

  • 3 large eggs, room temperature
  • 1 cup (200g) granulated sugar
  • 2/3 cup (150g) canned pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • 8 oz (225g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 6 tablespoons (85g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your jelly roll pan with parchment paper, leaving extra on the edges for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, beat the eggs and sugar with an electric mixer on high speed until thick and pale, about 3 minutes. Add the pumpkin puree and vanilla extract, and mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  5. Pour the batter into the prepared pan, spreading it evenly. Bake for 13-15 minutes, or until the top springs back when lightly pressed.
  6. While the cake is still warm, carefully invert it onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and gently roll the cake up with the towel. Let it cool completely.
  7. Beat the cream cheese, powdered sugar, butter, vanilla extract, and cinnamon (if using) until smooth and creamy.
  8. Unroll the cooled cake gently, spread the filling evenly over the surface, and re-roll the cake tightly. Wrap it in plastic wrap and refrigerate for at least 1 hour before serving.

Notes

Ensure your eggs are at room temperature for better volume when beating. Dust the towel generously with powdered sugar to prevent sticking. Chill the roll after assembling to make slicing easier and cleaner.
