  • 1/3 cup coconut oil, melted

  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine 3 cups of old-fashioned rolled oats, 1 cup of chopped pecans, and a pinch of salt. Stir until evenly combined.
  3. In a separate bowl, whisk together 1/2 cup pumpkin puree, 1/3 cup melted coconut oil, 1/3 cup maple syrup, 1 teaspoon vanilla extract, 2 teaspoons ground cinnamon, 1/2 teaspoon nutmeg, and 1/4 teaspoon ground cloves. Mix until smooth and well combined.
  4. Pour the wet mixture over the oats and pecans. Stir thoroughly to ensure every piece is evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer.
  6. Bake for 25-30 minutes, stirring every 10 minutes to ensure even cooking.
  7. If using dried cranberries, sprinkle them onto the granola during the last 5 minutes of baking.
  8. Once golden and fragrant, remove the granola from the oven and let it cool completely on the baking sheet.
  9. Store the cooled granola in an airtight container for up to two weeks.
