  • 2 medium sweet potatoes, baked and mashed
  • 1/2 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1/4 cup unsalted butter, melted
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 sheets premade pie crust, thawed if frozen
  • Optional: chopped pecans for garnish
  • Optional: whipped cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bake the sweet potatoes until tender (about 45 minutes at 400°F/200°C). Peel and mash them until smooth. Let cool slightly.
  3. In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, eggs, melted butter, heavy cream, vanilla extract, cinnamon, and nutmeg. Mix until the filling is creamy and well combined.
  4. Roll out the pie crust on a lightly floured surface, ensuring it’s even and thin. Use a cookie cutter or glass to cut out circles slightly larger than the muffin tin cups.
  5. Press the pie crust circles gently into the muffin tin cups, ensuring they cover the bottom and sides evenly.
  6. Spoon the sweet potato filling into each crust-lined cup, filling them about three-quarters full.
  7. Bake for 20-25 minutes, or until the filling is set and the crust is golden brown.
  8. Let the bites cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Optional: Top with whipped cream or chopped pecans before serving.

Notes

If the edges of the crust start to brown too quickly, cover them lightly with a strip of foil to prevent burning. Prepare the filling a day ahead for easy assembly.
