Perfect Lemon and Poppy Seed Scones Recipe for Easy Baking

  • 2 cups (250g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, chilled and diced
  • 2 tablespoons poppy seeds
  • Zest of 1 large lemon
  • 1/2 cup (120ml) heavy cream
  • 1 large egg
  • 1 cup (120g) powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt.
  3. Add chilled, diced unsalted butter to the dry mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
  4. Mix in poppy seeds and lemon zest. Stir gently to distribute evenly.
  5. In a small bowl, whisk together heavy cream and egg. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Turn the dough out onto a floured surface and gently knead it 2-3 times. Pat it into a 1-inch (2.5cm) thick circle.
  7. Cut the dough into 8 wedges and place them on the prepared baking sheet, leaving 2 inches (5cm) of space between each.
  8. Brush the tops with a bit of heavy cream for a golden finish. Bake for 18-22 minutes, or until the scones are lightly browned.
  9. While the scones cool, prepare the glaze by whisking powdered sugar with fresh lemon juice. Once the scones are cool, drizzle the glaze over the top.
