  • 2 yellow onions, thinly sliced
  • Pinch of granulated sugar
  • Salt and pepper, to taste
  • 1 cup Gruyère cheese, freshly shredded
  • 4 slices sourdough bread
  • Optional: Fresh thyme or a splash of balsamic vinegar

Instructions

  1. Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium heat. Add the thinly sliced onions, a pinch of sugar, and season with salt and pepper. Cook, stirring occasionally, for 20-25 minutes until the onions are golden brown and soft. Set aside.
  2. Butter one side of each bread slice generously.
  3. Place the bread slices butter-side down. Add a layer of shredded Gruyère cheese, followed by a generous scoop of caramelized onions. Top with another layer of cheese and place the second slice of bread butter-side up.
  4. Heat a nonstick pan or griddle over medium heat. Carefully place the assembled sandwich on the pan. Grill for 3-5 minutes per side, pressing gently with a spatula to ensure even cooking. The bread should be golden brown, and the cheese fully melted.
  5. Slice the sandwich in half and serve warm.
