  • 3 tablespoons (3 packets, about 21 grams) unflavored gelatin
  • ¼ cup (50 grams) granulated sugar
  • ½ cup (120 ml) cold water
  • Edible gold sanding sugar or glitter sprinkles for rimming
  • Optional: 1 teaspoon fresh lemon juice

Instructions

  1. Pour ½ cup (120 ml) cold water into a medium bowl. Sprinkle 3 tablespoons (21 grams) unflavored gelatin evenly over the water’s surface. Let it sit for 5 minutes to bloom.
  2. Gently warm the gelatin mixture over a double boiler or in short bursts in the microwave (about 20 seconds), stirring until fully dissolved and clear. Avoid boiling.
  3. Stir in ¼ cup (50 grams) granulated sugar while the gelatin is still warm until dissolved.
  4. Slowly pour 1 ½ cups (360 ml) chilled champagne into the gelatin mixture. Stir gently but thoroughly. Add 1 teaspoon fresh lemon juice if using.
  5. Lightly moisten the rims of shot glasses with a damp brush or a bit of champagne. Dip each rim into gold sprinkles, twisting to coat evenly. Set aside.
  6. Carefully pour the mixture into each prepared shot glass, filling about ¾ full. Transfer to the refrigerator and chill for at least 3-4 hours until fully set.
  7. Once set, serve chilled. Optionally garnish with a tiny edible flower or fresh berry.

Notes

Bloom gelatin properly to avoid lumps. Warm gelatin gently without boiling. Slowly mix warm gelatin with cold champagne to preserve bubbles. Moisten rims lightly to ensure sprinkles stick without sliding off. Chill for at least 3-4 hours, avoid shaking glasses while setting. Store covered in fridge up to 3 days. Non-alcoholic version can use sparkling grape juice. Agar-agar can be used for vegetarian version but texture differs.
