These elegant champagne jello shots combine the delicate fizz of champagne with a silky, jiggly texture, perfect for classy celebrations and easy to make in under 20 minutes.

  • 1 bottle (750 ml / 25.4 fl oz) dry or brut champagne
  • 3 envelopes (about 21 grams or 3 tablespoons) unflavored gelatin
  • ½ cup (100 grams / 3.5 oz) granulated sugar
  • 1 cup (240 ml / 8 fl oz) cold water
  • Lemon zest from 1 organic lemon (optional but recommended)
  • Fresh berries or edible flowers for garnish

Instructions

  1. Pour 1 cup (240 ml) cold water into a medium bowl. Sprinkle the 3 envelopes (21 grams) of unflavored gelatin evenly over the surface. Let it sit for 5 minutes to bloom.
  2. Place the bowl with bloomed gelatin over a saucepan of gently simmering water (double boiler method). Stir frequently until gelatin and sugar dissolve completely, about 3-5 minutes. Do not boil.
  3. Remove from heat and slowly whisk in 1 bottle (750 ml) of champagne along with the lemon zest. Stir gently to preserve bubbles.
  4. Ladle the mixture into jello shot molds or mini silicone cups, filling about ¾ full.
  5. Refrigerate for at least 4 hours or overnight until fully set.
  6. Once set, garnish each shot with a fresh berry or edible flower. To unmold from silicone, gently push from the bottom; plastic cups can be served as is or loosened with a warm towel.

Notes

Use cold champagne straight from the fridge to keep shots bubbly. Avoid boiling gelatin mixture to prevent rubbery texture. Adjust sugar based on champagne sweetness. For vegan version, substitute gelatin with agar-agar powder but expect different texture. Store refrigerated up to 3 days; do not freeze.
