Instructions

  1. Wash and dry strawberries thoroughly with cold water and paper towels; ensure they are completely dry (about 10 minutes).
  2. Chop dark chocolate finely and melt using a double boiler or microwave in 30-second bursts, stirring until smooth and glossy (5-7 minutes).
  3. Dip each strawberry about three-quarters of the way into the melted dark chocolate, letting excess drip off. Place on parchment-lined baking sheet to set.
  4. When dipped strawberries are mostly set but still slightly tacky (about 10 minutes), brush or spray edible gold dust lightly over them.
  5. Melt white chocolate (or black cocoa chocolate) in a clean bowl using the same method. Drizzle thin lines decoratively over the dipped strawberries using a spoon or piping bag.
  6. Chill strawberries in the refrigerator for 15-20 minutes to fully set the chocolate coating.
  7. Assemble the tower by inserting strawberries with the stem side down into the holes of the tower stand or poke into the foam cone, overlapping slightly for fullness (10-15 minutes).
  8. Add final touches like extra edible gold dust or drizzle if desired. Keep the tower refrigerated until serving, but bring out 10 minutes prior to serving.
