  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ½ cup (113g) unsalted butter, softened
  • ½ cup (100g) brown sugar
  • ¼ cup (60ml) pure maple syrup
  • ⅓ cup (80g) pumpkin puree
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat the softened butter and brown sugar with an electric mixer until light and fluffy, about 2-3 minutes.
  4. Mix in the maple syrup, pumpkin puree, egg yolk, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Do not overmix.
  6. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are set and the tops look slightly glossy. They will firm up as they cool.
  8. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
