  • 2 large eggs, room temperature
  • ½ tsp salt
  • 1 cup (200g) packed brown sugar
  • 2 tbsp cinnamon
  • 8 strips bacon, cooked until crispy and crumbled
  • ½ cup (120ml) maple syrup
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Dough: Mix warm milk and sugar in a small bowl, then sprinkle yeast on top. Let sit for 5-10 minutes until frothy. In a large bowl or stand mixer, combine flour and salt.
  2. Mix and Knead: Add melted butter and eggs to the yeast mixture. Gradually incorporate this liquid into the flour mixture while mixing on low speed. Knead the dough for 8-10 minutes until smooth and elastic.
  3. Let It Rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm spot for about 1 hour or until doubled in size.
  4. Cook the Bacon: Cook bacon in a skillet until crispy. Let cool, then crumble into small pieces.
  5. Make the Filling: Combine brown sugar and cinnamon in a small bowl. Melt 3 tablespoons of butter and keep ready.
  6. Roll Out the Dough: Punch down the risen dough and roll it out on a floured surface to form a rectangle about 12×18 inches.
  7. Add the Filling: Brush melted butter over the rolled-out dough. Sprinkle cinnamon-sugar mixture evenly over the surface, followed by crumbled bacon.
  8. Roll and Cut: Roll the dough into a tight log starting from one of the longer edges. Cut the log into 12 equal slices using a sharp knife or dental floss.

  11. Make the Maple Glaze: Whisk powdered sugar, maple syrup, and vanilla extract in a bowl until smooth. Adjust consistency with a splash of milk if needed.
