Loaded Sweet Potato Skins Recipe with Bacon and Cream

These loaded sweet potato skins are the ultimate comfort food, combining the natural sweetness of sweet potatoes with crispy bacon, gooey cheese, and tangy sour cream. Perfect for game days, cozy dinners, or as an appetizer for gatherings.

  • 4 medium-sized sweet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 6 slices crispy bacon, cooked and chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (or Greek yogurt as a lighter alternative)
  • 2 green onions, thinly sliced

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Scrub the sweet potatoes clean, pat them dry, and prick them with a fork a few times. Place them on the baking sheet and bake for 35-40 minutes or until tender.
  3. While the sweet potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain excess grease, then chop into small pieces.
  4. Once cooked, let the sweet potatoes cool for about 10 minutes or until they’re safe to handle.
  5. Slice the sweet potatoes in half lengthwise. Use a spoon to scoop out the flesh, leaving a thin layer of potato inside the skins. Place the flesh in a mixing bowl.
  6. Mash the sweet potato flesh with a fork or potato masher. Add half of the shredded cheese, half of the bacon, and a pinch of salt and pepper. Mix until well combined.
  7. Spoon the filling back into the potato skins, dividing it evenly. Top with the remaining cheese and bacon.
  8. Return the filled potato skins to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  9. Top the potato skins with sour cream, a sprinkle of green onions, and any additional toppings you like. Serve hot!

Notes

For extra crispy skins, brush them with olive oil before baking and use the broiler for 1-2 minutes at the end. Customize the filling with herbs, spices, or hot sauce for added flavor.
