  • 12 ounces (340 grams) tortilla chips
  • 2 cups (200 grams) shredded sharp cheddar and Monterey Jack cheese blend
  • 1/2 pound (225 grams) ground beef, cooked and seasoned
  • 1 small onion, finely diced
  • 2 medium jalapeño peppers, thinly sliced (seeds removed for milder heat)
  • 1 cup (about 170 grams) black beans, rinsed and drained
  • 1 medium tomato, diced
  • 3 stalks green onions, sliced thinly
  • A handful fresh cilantro, chopped (optional)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Sour cream or Greek yogurt for topping (optional)
  • Fresh lime wedges for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Add diced onion and sauté until soft, about 3-4 minutes.
  3. Add ground beef to the skillet and cook until browned, breaking it up with a spoon.
  4. Stir in chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Cook for another 2 minutes until fragrant. Remove from heat.
  5. While the beef cooks, rinse and drain black beans, slice jalapeños and green onions, and dice tomato. Chop cilantro if using.
  6. Spread half of the tortilla chips evenly on a large baking sheet.
  7. Sprinkle half of the beef mixture, black beans, jalapeños, and cheese over the chips.
  8. Add the remaining chips and repeat the layering with beef, beans, jalapeños, and cheese.
  9. Place the tray in the oven and bake for about 10-12 minutes or until the cheese is fully melted and bubbly.
  10. Once out of the oven, scatter diced tomatoes, green onions, and chopped cilantro on top.
  11. Dollop sour cream or Greek yogurt as desired.
  12. Serve immediately with lime wedges on the side for squeezing over just before eating.

Notes

To prevent soggy chips, avoid overloading the tray with toppings and bake immediately before serving. For extra crispiness, toast tortilla chips in the oven for 5 minutes before layering. Let nachos rest for 1-2 minutes after baking to avoid burning fingers on molten cheese. Use a mix of sharp cheddar and Monterey Jack for best melt and flavor. Ground beef can be swapped with ground turkey, shredded chicken, or plant-based crumbles. Vegan cheese alternatives work well for dairy-free versions.
