  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 3 tablespoons (45ml) fresh lemon juice
  • 1 tablespoon (6g) lemon zest (from 12 lemons)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) fresh lemon juice
  • 1/2 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a medium mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the lemon juice and zest.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Avoid overmixing.
  5. Pour the batter into the prepared pan and spread it evenly with a spatula. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Allow the brownies to cool completely on a wire rack before adding the glaze.
  7. In a small bowl, whisk together the powdered sugar, lemon juice, and zest until smooth. Adjust consistency with more lemon juice or powdered sugar as needed.
  8. Pour the glaze over the cooled brownies and spread it evenly. Let the glaze set for 10-15 minutes before slicing into squares.
