Transform your Thanksgiving leftovers into crispy, golden turkey and stuffing waffles. Perfect for breakfast, brunch, or dinner, this creative recipe is a delicious way to reduce food waste and enjoy the flavors of the holidays.

Ingredients

Scale
  • 4 cups (400g) leftover stuffing
  • 2 cups (250g) shredded cooked turkey
  • 2 large eggs
  • 1/4 cup (60ml) chicken or turkey broth
  • Gravy, warmed for serving
  • Cranberry sauce for topping
  • Cooking spray

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions. Lightly spray it with cooking spray to prevent sticking.
  2. In a large mixing bowl, combine 4 cups (400g) of leftover stuffing, 2 cups (250g) of shredded cooked turkey, and 2 large eggs.
  3. Add 1/4 cup (60ml) of chicken or turkey broth to the mixture. Stir until everything is evenly combined and the mixture holds together. If it seems too dry, add a little more broth, 1 tablespoon at a time.
  4. Once the waffle iron is hot, scoop about 1 cup (240ml) of the mixture onto the center of the iron. Spread it out slightly, then close the lid and cook for 5-7 minutes, or until the waffle is golden brown and crispy.
  5. Carefully remove the waffle using a spatula and transfer it to a plate. Repeat with the remaining mixture, spraying the waffle iron as needed between batches.
  6. Serve the waffles warm, topped with heated gravy and a dollop of cranberry sauce. Enjoy!

Notes

[‘If your stuffing is particularly dry, add a splash more broth to help it bind better.’, ‘Don’t overload the waffle iron to ensure even cooking.’, ‘Clean the waffle iron between batches to prevent sticking.’]
