  • 1 teaspoon sriracha (optional)
  • 1/2 cup diced water chestnuts
  • 2 tablespoons chopped green onions
  • 2 tablespoons peanut butter (natural preferred)
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil
  • Optional toppings: crushed peanuts, shredded carrots, cilantro

Instructions

  1. Prepare the peanut sauce: In a small mixing bowl, whisk together 2 tablespoons peanut butter, 1 tablespoon lime juice, 1 tablespoon honey, 1 tablespoon soy sauce, 1 teaspoon rice vinegar, and ½ teaspoon sesame oil. Add water if needed to adjust consistency. Set aside.
  2. Heat a large skillet over medium heat and add a drizzle of sesame oil. Add 2 minced garlic cloves and 1 tablespoon grated ginger. Sauté for about 30 seconds until fragrant.
  3. Add 1 pound of ground turkey to the skillet. Use a wooden spoon to break it up into small pieces as it cooks. Cook for about 5-7 minutes, or until the turkey is fully browned.
  4. Stir in 2 tablespoons soy sauce and 2 tablespoons hoisin sauce. Mix well to coat the turkey evenly.
  5. Add ½ cup diced water chestnuts and cook for an additional 2 minutes.
  6. Remove the skillet from heat and stir in 2 tablespoons chopped green onions. Taste and adjust seasoning if needed.
  7. Wash and dry lettuce leaves (about 10-12 leaves). Butter lettuce or romaine works best for wrapping.
  8. To assemble, scoop the turkey mixture into the center of each lettuce leaf. Drizzle with the prepared peanut sauce.
  9. Top with optional garnishes like crushed peanuts, shredded carrots, or cilantro for extra flavor and crunch.
