Irresistible Spinach Artichoke Tartlets

Golden, crispy tartlets filled with creamy spinach and artichoke goodness, perfect for parties or casual gatherings.

  • 1 sheet puff pastry, thawed
  • 2 tbsp all-purpose flour (for rolling)
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 4 oz cream cheese, softened
  • 1/2 cup grated parmesan cheese
  • 1/4 cup sour cream
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 1 egg, beaten (for brushing)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin lightly or line with cupcake liners.
  2. On a lightly floured surface, roll out the thawed puff pastry until it’s thin but not too delicate. Using a cookie cutter or round glass, cut out circles that fit into the muffin tin cups. Place each circle into a cup, gently pressing down to form the base and sides.
  3. In a mixing bowl, combine the chopped spinach, artichoke hearts, softened cream cheese, grated parmesan, sour cream, and minced garlic. Stir until well combined and creamy. Season the mixture with salt and pepper to taste.
  4. Spoon about 1-2 tablespoons of the spinach artichoke mixture into each prepared pastry cup, filling them almost to the top.
  5. Brush the edges of the pastry with the beaten egg to help achieve a golden, shiny finish.
  6. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the filling is bubbly. Keep a close eye on them during the last few minutes to avoid overbaking.
  7. Once cooked, remove the tartlets from the oven and allow them to cool in the muffin tin for 5 minutes. Then, carefully transfer them to a wire rack to cool slightly.
  8. Serve warm or at room temperature. Enjoy!
