  • 2 cups firm, sweet apples (such as Honeycrisp or Fuji), diced
  • 1 cup dried cranberries
  • 1 cup yellow or white onion, diced
  • 1 cup celery, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 8 cups bread cubes (day-old French or sourdough bread, toasted)
  • 1 to 1 ½ cups chicken or vegetable broth
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. Cut fresh bread into 1-inch cubes and toast in the oven for 10 minutes until slightly crispy.
  3. Heat a large skillet over medium heat and cook the sausage, breaking it into small pieces, until browned and fully cooked, about 8 minutes. Remove from the skillet and set aside.
  4. In the same skillet, melt 2 tablespoons of butter. Add the onions, celery, and garlic, sautéing until softened and fragrant, about 5 minutes.
  5. Stir in the diced apples and dried cranberries, cooking for another 3-4 minutes until the apples start to soften slightly.
  6. In a large mixing bowl, combine the toasted bread cubes, cooked sausage, and sautéed vegetable mixture. Add the fresh sage and thyme, then season with salt and pepper to taste.
  7. Gradually pour in the chicken or vegetable broth while gently tossing the mixture. The bread cubes should be moist but not soggy. Use around 1 to 1 ½ cups of broth, adjusting as needed.
  8. Evenly spread the stuffing mixture into the prepared baking dish.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes to allow the top to become golden and slightly crispy.
  10. Let the stuffing cool for 5 minutes before serving.
