  • 1 pound ground beef (80/20 for the best flavor)
  • 1/2 cup breadcrumbs (use panko for extra crunch)
  • 1 large egg, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely sliced
  • 1 cup mushrooms, thinly sliced
  • 2 cups beef broth (low-sodium preferred)
  • 1 tablespoon tomato paste
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water to form a slurry)
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper, to taste
  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  2. Roll the mixture into 1-inch balls and set aside. You should get about 16 meatballs.
  3. Heat 2 tablespoons of oil in a skillet over medium-high heat. Brown the meatballs on all sides for about 8 minutes. Remove and set aside.
  4. In the same skillet, melt the butter and sauté the onions and mushrooms until soft, about 5 minutes. Add the tomato paste and stir well.
  5. Stir in the beef broth and thyme. Bring to a simmer, then add the cornstarch slurry and whisk until the gravy thickens. Season with salt and pepper.
  6. Return the meatballs to the skillet and simmer in the gravy for 10 minutes, turning occasionally to coat them evenly.
  7. Boil the potatoes in salted water until fork-tender, about 15 minutes. Drain well.
  8. In the saucepan, melt the butter and sauté the garlic for 1 minute. Add the cream, then mash the potatoes until smooth. Stir in the parsley and chives, and season with salt and pepper.
  9. Plate the garlic mash and top it with the meatballs and gravy. Garnish with extra herbs if desired.

Notes

Don’t overmix the meatball mixture to keep them tender. Brown the meatballs well for added flavor. Use a ricer for lump-free mashed potatoes.
