  • A few sprigs of fresh rosemary
  • 810 cloves garlic, minced or finely grated
  • 3 tablespoons olive oil
  • 23 tablespoons coarse sea salt
  • 2 teaspoons freshly cracked black pepper
  • Optional: thyme or sage

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Remove the prime rib from the refrigerator and let it come to room temperature for about 1 hour.
  3. In a mixing bowl, combine 3 tablespoons of olive oil, 8-10 minced garlic cloves, and 2-3 tablespoons of chopped fresh rosemary. Mix well to create a fragrant paste.
  4. Pat the prime rib dry with paper towels and generously rub the garlic-rosemary paste all over the meat, ensuring even coverage.
  5. Season the roast liberally with coarse sea salt and freshly cracked black pepper.
  6. Place the roast on a rack in a roasting pan, fat side up. Insert a meat thermometer into the thickest part of the roast, making sure it doesn’t touch the bone.
  7. Roast the prime rib at 450°F (230°C) for 20 minutes to develop a flavorful crust.
  8. Lower the oven temperature to 325°F (165°C) and continue roasting. For medium-rare, cook until the internal temperature reaches 130°F (54°C), about 1.5-2 hours.
  9. Once the roast reaches your desired temperature, remove it from the oven and tent it loosely with aluminum foil. Let it rest for at least 20 minutes.
  10. Carve the roast into thick slices and serve immediately.
