Instructions

  1. Prepare the Coffee: Brew 1 cup (240 ml) of espresso or strong coffee and let it cool completely.
  2. Whip the Cream: In a medium mixing bowl, whip 1 cup (240 ml) of heavy cream with 2 tablespoons (25 g) powdered sugar until soft peaks form. Set aside.
  3. Make the Mascarpone Mixture: In a large bowl, beat 16 oz (450 g) mascarpone cheese with 1 cup (240 g) pure pumpkin puree, 1 teaspoon vanilla extract, and 1 teaspoon pumpkin pie spice until smooth and creamy.
  4. Fold in the Whipped Cream: Gently fold the whipped cream into the mascarpone mixture until fully combined. Be careful not to deflate the cream.
  5. Dip the Ladyfingers: Quickly dip each ladyfinger into the cooled coffee, ensuring they’re soaked but not soggy.
  6. Layer the Tiramisu: Arrange a single layer of coffee-soaked ladyfingers in the bottom of your baking dish. Spread half of the pumpkin-mascarpone mixture on top. Repeat with a second layer of ladyfingers and the remaining creamy mixture.
