Instructions

  1. Prepare the fries: If using frozen fries, follow the package instructions to bake or air-fry them until crispy and golden-brown. If making homemade fries, peel and slice russet potatoes into thin strips, soak them in cold water for 30 minutes, then pat dry. Toss with oil and bake at 425°F (218°C) for 25-30 minutes, flipping halfway through.
  2. Make the turkey gravy: In a skillet, melt 4 tablespoons (56g) of butter over medium heat. Add 4 tablespoons (30g) of all-purpose flour and whisk continuously for 2-3 minutes until it forms a smooth paste.
  3. Add the liquid: Slowly pour in 2 cups (480ml) of turkey drippings or stock, whisking constantly to prevent lumps. If you prefer a creamier gravy, stir in ¼ cup (60ml) of milk or cream.
  4. Season the gravy: Add salt and pepper to taste. Simmer for 5-7 minutes until the gravy thickens and reaches your desired consistency. Keep warm until ready to serve.
  5. Assemble the poutine: Place the crispy fries on a serving dish. Sprinkle freshly squeaky cheese curds generously over the fries. Pour the hot turkey gravy over the top, ensuring every bite gets a little gravy and cheese.
  6. Optional toppings: Garnish with fresh parsley for a pop of color or add crumbled bacon for extra flavor.
