  • 34 lbs beef chuck roast
  • 1 large onion, sliced
  • 45 carrots, peeled and cut into chunks
  • 45 potatoes, quartered (Yukon Gold or red potatoes recommended)
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Slice the onion, peel and chop the carrots, and quarter the potatoes. Set aside.
  2. Generously season the beef chuck roast with salt, pepper, and Italian seasoning on all sides.
  3. Optional: Heat a large skillet over medium-high heat, add a tablespoon of oil, and sear the roast for 2-3 minutes per side until browned.
  4. Place the sliced onions at the bottom of the slow cooker. Add the carrots and potatoes on top. Lay the seared roast over the vegetables.
  5. In a small bowl, whisk together beef broth, Worcestershire sauce, tomato paste, and minced garlic. Pour this mixture over the roast and vegetables.
  6. Cover the slow cooker and set it to low heat. Cook for 8-10 hours, or until the beef is fork-tender and the vegetables are cooked through.
  7. Optional: Remove the roast and vegetables from the slow cooker. Strain the liquid into a saucepan and simmer over medium heat. Add cornstarch mixed with water to thicken, if desired.
  8. Slice the roast and arrange it on a platter with the vegetables. Drizzle with gravy and serve.
