Irresistible Pomegranate Arugula Salad Recipe with Feta

A vibrant and refreshing salad combining sweet pomegranate, peppery arugula, creamy feta, and a zesty homemade dressing. Perfect for any occasion!

Ingredients

  • 4 cups arugula
  • 1 cup pomegranate arils
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup sliced almonds, toasted
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the arugula thoroughly.
  2. If using fresh pomegranate, cut it in half and carefully scoop out the arils.
  3. Thinly slice the red onion and set aside.
  4. Heat a small skillet over medium heat and add the sliced almonds. Stir frequently for 3-5 minutes until they’re golden and fragrant. Remove from heat and let cool.
  5. In a small bowl, whisk together olive oil, fresh lemon juice, honey, Dijon mustard, and a pinch of salt and pepper. Taste and adjust seasoning as needed.
  6. In a large salad bowl, combine the arugula, pomegranate arils, sliced red onion, crumbled feta, and toasted almonds.
  7. Drizzle the dressing over the salad, tossing gently to coat evenly.
  8. Transfer the salad to a serving platter or individual plates and enjoy immediately.
