Irresistible Millet Stuffing Recipe with Mushrooms and Thyme

  • 1 cup millet, rinsed and drained
  • 2 cups vegetable broth
  • 2 cups cremini mushrooms, sliced
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 tablespoons butter (use vegan butter for dairy-free version)
  • 2 teaspoons fresh thyme, minced
  • Salt to taste
  • Black pepper to taste
  • Optional: Chopped parsley for garnish

Instructions

  1. Rinse the millet under cold water until the water runs clear to remove any bitterness. In a medium saucepan, combine 1 cup of millet and 2 cups of vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff the millet with a fork and set aside.
  2. While the millet cooks, heat 2 tablespoons of butter in a large skillet over medium heat. Add the diced onion and celery, sautéing for 3-4 minutes or until softened.
  3. Stir in the sliced mushrooms and minced garlic. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture. If the pan looks dry, you can add a small splash of vegetable broth or a little more butter.
  4. Sprinkle the sautéed vegetables with 2 teaspoons of fresh thyme, salt, and pepper to taste. Stir well to combine.
  5. Add the cooked millet to the skillet with the vegetables. Stir everything together until well mixed and heated through. Taste and adjust seasoning if needed.
  6. Transfer the stuffing to a serving dish and garnish with freshly chopped parsley for a burst of color and flavor.
