Instructions

  1. In a mixing bowl, combine 2 cups of cooled mashed potatoes, 1 cup of all-purpose flour, 1 egg yolk, and 1 teaspoon of salt. Mix until a soft dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time, until it’s manageable.
  2. Lightly flour your work surface and divide the dough into 4 equal portions. Roll each portion into a long rope about ½ inch thick. Cut the rope into 1-inch pieces. Use a fork to gently press ridges into each piece.
  3. Bring a large pot of salted water to a boil. Drop the gnocchi into the water, working in batches to avoid overcrowding. Once the gnocchi float to the surface (about 2-3 minutes), use a slotted spoon to transfer them to a plate lined with a paper towel.
  4. In a skillet, melt 6 tablespoons of unsalted butter over medium heat. Add 5-6 fresh sage leaves and cook until the butter turns golden brown and smells nutty (about 3-5 minutes). Stir occasionally to prevent burning.
  5. Add the cooked gnocchi to the skillet with the brown butter sauce. Toss gently to coat each piece. Season with freshly ground black pepper and serve immediately, topped with a sprinkle of Parmesan cheese if desired.
