  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 clove garlic, minced
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, peeled and thinly sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 3/4 cup acini di pepe pasta
  • 4 cups baby spinach

Instructions

  1. In a mixing bowl, combine ground turkey, breadcrumbs, grated Parmesan, egg, minced garlic, chopped parsley, salt, and black pepper. Mix gently until combined. Roll into small 1-inch meatballs and set aside.
  2. Heat olive oil in a large soup pot over medium heat. Add diced onion, sliced carrots, and sliced celery. Sauté until softened, about 5 minutes.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Carefully drop the meatballs into the simmering broth. Cook for 8-10 minutes or until they’re cooked through. Use a slotted spoon to gently stir and prevent sticking.
  5. Stir in acini di pepe pasta and cook for another 8 minutes, or until the pasta is tender.
  6. Add baby spinach and let it wilt into the soup, about 2 minutes.
  7. Taste and adjust seasoning with more salt and pepper if needed. Serve hot with a sprinkle of grated Parmesan and fresh parsley on top.
