A comforting and customizable breakfast casserole featuring everything bagels, eggs, cheese, and savory toppings. Perfect for brunch or family mornings.

Ingredients

Scale
  • 45 everything bagels, cut into bite-sized pieces (stale bagels work perfectly)
  • 8 large eggs, beaten
  • 2 cups whole milk (or substitute with almond milk for a dairy-free option)
  • 1 ½ cups shredded cheddar, mozzarella, or your favorite cheese blend
  • 1 cup cooked and crumbled breakfast sausage or bacon (can substitute with plant-based sausage for a vegetarian twist)
  • 1 cup chopped onions, bell peppers, or spinach
  • 4 oz cream cheese, cubed
  • 23 tablespoons Everything Bagel seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your 9×13 baking dish with cooking spray or a thin layer of butter.
  2. Slice your everything bagels into bite-sized chunks. If your bagels are fresh, leave them out for a few hours to dry out, or toast them lightly.
  3. Cook the breakfast sausage or bacon in a skillet over medium heat until browned and crispy. Remove from heat and crumble or chop into small pieces.
  4. In a large bowl, whisk together the eggs, milk, and a pinch of salt and pepper until fully combined.
  5. Spread the bagel pieces evenly across the bottom of the greased baking dish.
  6. Sprinkle the cooked sausage or bacon over the bagel pieces.
  7. Add your chopped vegetables, spreading them out evenly.
  8. Distribute the cubed cream cheese across the top.
  9. Pour the egg mixture evenly over the assembled ingredients.
  10. Sprinkle the shredded cheese and everything bagel seasoning on top.
  11. Place the casserole in the preheated oven and bake for 40-45 minutes or until the eggs are set and the top is golden brown.
  12. Allow the casserole to cool for 5-10 minutes before slicing and serving.

Notes

[‘Stale or toasted bagels absorb the egg mixture better and give the casserole a light, fluffy texture.’, ‘Fresh vegetables and high-quality cheese enhance the flavor.’, ‘Avoid overbaking; remove the casserole once the eggs are set and the top is golden brown.’, ‘Avoid adding too many watery ingredients to prevent a soggy casserole.’, ‘You can assemble the casserole the night before and refrigerate it for easy baking in the morning.’]
