Irresistible Curry Coconut Sweet Potatoes Recipe

A creamy and flavorful dish combining coconut milk, sweet potatoes, and curry spices for a comforting and exotic side dish.

  • 2 lbs sweet potatoes, peeled and cubed
  • 1 cup full-fat coconut milk
  • 2 tbsp unsalted butter (or vegan butter for dairy-free option)
  • 1½ tsp curry powder
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp black pepper
  • Fresh cilantro or parsley for garnish

Instructions

  1. Peel and cube 2 lbs of sweet potatoes into roughly 1-inch pieces.
  2. Place the cubes in a large pot and cover with water. Add a pinch of salt and bring to a boil over medium-high heat. Cook for 15-20 minutes or until fork-tender.
  3. Carefully drain the sweet potatoes using a colander and return them to the pot. Allow any excess moisture to evaporate for a minute or two.
  4. Using a potato masher or hand mixer, mash the sweet potatoes until smooth. Stop mashing once you reach your desired consistency.
  5. Pour in 1 cup of full-fat coconut milk, 2 tbsp of unsalted butter, 1½ tsp of curry powder, ½ tsp of ground cinnamon, ½ tsp of salt, and ¼ tsp of black pepper. Stir everything together until well combined.
  6. Taste and adjust the seasoning as needed. Add more curry powder for extra spice or a pinch more cinnamon for sweetness.
  7. Transfer the mashed sweet potatoes to a serving bowl. Garnish with freshly chopped cilantro or parsley for a burst of color and freshness. Serve warm.
