  • 34 pounds beef chuck roast, trimmed of excess fat
  • 4 cups low-sodium beef broth
  • 2 tablespoons soy sauce
  • 2 tablespoons Worcestershire sauce
  • 45 cloves garlic, minced
  • 1 large onion, sliced thinly
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • French rolls, crusty
  • Provolone cheese, optional

Instructions

  1. Season the chuck roast generously with salt and pepper on all sides.
  2. In your Crockpot, add the sliced onions, garlic, beef broth, soy sauce, Worcestershire sauce, and dried thyme. Place the seasoned beef on top.
  3. Cover and cook on low for 8–10 hours or on high for 4–5 hours, until the beef is tender and easily shredded.
  4. Carefully remove the beef from the Crockpot and place it on a cutting board. Use two forks to shred it into thin pieces.
  5. Strain the cooking liquid to remove solids, then pour the broth into small bowls for dipping.
  6. Slice the French rolls, layer with shredded beef, and top with provolone cheese if desired. Toast the sandwiches in the oven for a few minutes to melt the cheese.
  7. Place the warm sandwiches on a plate and serve with bowls of au jus for dipping.

Notes

For best results, toast the rolls lightly to prevent sogginess and skim excess fat from the au jus before serving. Adjust seasoning to taste.
