Ingredients

Scale
  • 1 cup canned corn kernels, drained (or fresh/frozen corn)
  • 1 cup cream-style corn
  • 2 large eggs, room temperature
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
  2. In a large mixing bowl, whisk together 2 large eggs, 1 cup of sour cream, and 1/2 cup of melted unsalted butter until smooth.
  3. Stir in 1 cup of canned corn kernels (drained), 1 cup of cream-style corn, and 1/2 cup of milk. Ensure everything is well combined.
  4. In a separate bowl, mix 1/4 cup of all-purpose flour, 1 tablespoon of granulated sugar, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until you have a smooth batter.
  6. Pour the batter into your greased casserole dish and smooth the top with a spatula.
  7. Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden and the center is set. A toothpick inserted into the center should come out clean.
  8. Let the casserole rest for about 10 minutes before serving.
