  • 2 heads romaine lettuce
  • 2 cups day-old bread, cubed
  • 2 tablespoons olive oil
  • 4 anchovy fillets, finely chopped
  • 2 egg yolks
  • 1 garlic clove, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup olive oil
  • 1/4 cup Parmesan cheese, grated
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Toss 2 cups of cubed day-old bread with 2 tablespoons of olive oil and 4 finely chopped anchovy fillets. Spread them out on a baking sheet and bake for 10-12 minutes, flipping halfway through, until golden and crisp.
  2. In a mixing bowl, whisk together 2 egg yolks, 1 minced garlic clove, 2 tablespoons freshly squeezed lemon juice, 1 teaspoon Dijon mustard, and 1 teaspoon Worcestershire sauce until smooth. Slowly drizzle in 1/3 cup olive oil while whisking continuously to create a creamy emulsion. Stir in 1/4 cup grated Parmesan cheese. Taste and adjust seasoning with salt and freshly cracked black pepper.
  3. Preheat your grill or grill pan to medium-high heat. Cut 2 heads of romaine lettuce in half lengthwise, keeping the stem intact to hold the leaves together. Brush the cut sides with olive oil and place them on the grill. Cook for 1-2 minutes per side until lightly charred but still crisp.
  4. Arrange the charred romaine halves on a large platter. Drizzle generously with the Caesar dressing, scatter the anchovy croutons on top, and finish with more grated Parmesan and freshly cracked black pepper.
