  • 2 cloves garlic, minced
  • A small handful of fresh basil, chopped
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper (freshly ground)
  • Optional: Finely diced red onion or a sprinkle of grated Parmesan

Instructions

  1. Dice the tomatoes into small, even pieces and place them in a mixing bowl.
  2. Mince the garlic cloves and add them to the bowl with the tomatoes.
  3. Chop the basil into thin ribbons and toss them in with the tomatoes.
  4. Drizzle the olive oil over the mixture, coating everything evenly.
  5. Sprinkle in the salt, pepper, and balsamic vinegar, then stir gently to combine.
  6. Taste and adjust the seasoning as needed. Add more balsamic vinegar for acidity or olive oil for richness.
  7. Optional: Garnish with Parmesan or finely diced red onion for added texture and flavor.
  8. Transfer to a serving dish and pair with toasted baguette slices, pita chips, or crackers.

Notes
