Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set it aside.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix.
  5. Fold in the diced apples using a spatula. Ensure the apples are evenly distributed throughout the batter.
  6. Using a cookie scoop or tablespoon, drop portions of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 15-18 minutes or until the fritters are golden brown and a toothpick inserted in the center comes out clean.
  8. While the fritters cool slightly on a wire rack, prepare the optional glaze. Mix powdered sugar with a splash of milk until it reaches your desired consistency.
